Cottage Cheese Apple Pancakes

Ingredients

    • 1 apple, cored and sliced into 8 thin rings (we like EverCrisp®, Gala, Honeycrisp, or SweeTango®)
    • ½ cup full-fat cottage cheese
    • 2 eggs
    • 1 tsp vanilla extract
    • ⅔ cup rolled oats
    • 1 tsp baking powder
    • 1 tsp ground cinnamon
    • Pinch of salt
    • Water or milk of choice (if batter is too thick)

    Directions

      1. Add wet ingredients (cottage cheese, eggs, and vanilla) to a blender. Pulse to combine.
      2. Add dry ingredients (rolled oats, baking powder, ground cinnamon, and salt) to the wet mixture. Blend until smooth. If batter is too thick, add 1-2 Tbsp water or milk of choice.
      3. Grease a large skillet with butter or neutral oil. Heat over medium, then, working in batches, add sliced apples.
      4. Pour batter over apples. Cook until bubbles form, then flip.
      5. Serve with your favorite pancake toppings!
